There has been a combination of Mop sauces I have used over the years when I bbq and also smoking my own meats for deliciousness. Last month I combined two of my favorite recipes and came up with a concoction that I might as well share.
Sabbatius' Beer & Coffee Mop Sauce
Ingredients
1 cup Distilled White Vinegar
1 cup Apple Cider Vinegar
1 cup Black Coffee
1 cup Beef Stock
1 cup Beer (I Use a Black Bavarian from Sprechers)
¼ cup Worcestershire Sauce
1 tablespoon Hot Sauce (One You Really Love)
1 tablespoon Red Pepper Flakes
1 teaspoon Onion Powder
1 teaspoon Garlic Powder
2 tablespoons Packed Brown Sugar
1 teaspoon Dry Mustard
½ teaspoon Sea Salt
¼ teaspoon Fresh Ground Black Pepper
¼ cup Sweet Paprika
2 tablespoon Chili Powder
½ teaspoon Dried Oregano
Directions
1. Mix all ingredients together ( I usually combine dry first, then add the wet.)
2. Taste, then add what you want more of, for flavor.
2. Store in an airtight container (I use a huge glass jar with an airtight rubber lid) in the refrigerator for up to one month.
3. Stir before using after storage.
Best uses have been on a Brisket I made three weeks ago. and two Pork Butts last weekend.
