Slow Cooker Creamy Tortellini

Seeing as we have a cold front coming in with snow expected, I'd like to share my favorite low-effort comfort electric cauldron recipe!

Ingredients

  • 1 package of frozen cheese tortellini
  • 1 lb Italian sausage, cooked and drained of grease
  • 1 package of cream cheese
  • 1 can of diced tomatoes (you can use Rotel in substitution if you'd like it to be a little spicier), drained
  • 1 white onion, diced
  • 3-6 oz spinach (basically a whole small bag from the grocer)
  • 3-4 cups chicken broth (I make my own using leftover chicken bones & veggies, but a 32 oz carton of low sodium can work in a pinch)
  • garlic, to taste (or do like me and keep adding until your ancestors tell you to stop)
  • 1 tsp. Italian seasoning
  • black pepper, to taste (optional)
  • crushed red pepper, to taste (also optional)
  • Parmesan cheese for topping (optional)

Directions

  1. Brown and drain your sausage and onions
  2. Cube cream cheese
  3. Place all your ingredients in the slow cooker, pouring the tomatoes/rotel and chicken broth on top
  4. Cook 2½ to 3½ hours on low. When cooked through, stir until smooth.
  5. If it's too runny for your liking at this point, you can leave the lid off for up to an additional hour to allow it to thicken. Likewise, if it's too thick you can add more broth.
  6. Top with optional ingredients and serve.
